You can do this as many times as you want actually, just make sure the branch you pinch as at least 3 nodes, and pinch the 4th.

Negative. If you PINCH it, it will grow taller, from TWO branches.

If you PRUNE it, by taking off a BUNCH of the top stem, it will be stunted vertically, yes.

Yeah I'm kind of confused about the whole lateral leaves thing too.  I understand the removing the protoleaves, but are you saying the new leaves that form on the new branches should be cut off?

I am a little confused as well, but I think it will all make sense if I just follow the first few steps and watch my plant after that for the lateral leaves. I'll get plenty of pictures along the way to post and maybe it will become a bit clearer.
