I removed the Psychotria sprouts from the leaves today and put them into separate pots.

I didn't want to risk killing the sprouts so instead of taking the sprouts off of the root ball I just took off the leaf and I planted the whole root ball with all of the sprouts still attached.

I also put the leaves back in pots because I was able to save almost all of the leaf except the very tip of the petiole so I'm hoping they might reroot.

They should if conditions are right. Conceivably you could cut them into small sections and root the leaf numerous times as long as there's enough carbohydrates left in the leaf material to form a shoot and roots from.

They grow well in a humid environment (which is why I have a plastic back over the unrooted leaves) but they can be acclimated to a drier climate.

Yep, they love a warm, humid environment for a LONG time.
You have to wait a long time until you establish them to lower humidity, because they are really sensitive.
Good luck with yours!

They're turning a little yellow and I'm pretty sure it's because they're so far away from the fluorescent tube so I'm going to get a CFL bulb tomorrow and I'll put it over them.

Yeah, it's probably chlorophyll deficiency.
This happens from:
-not enough light, resulting in the plant not producing chlorophyll (a green pigment)
-nitrogen deficiency
They look nice though. I'm sure they'll probably be fine!!
Good luck!
